Amaretto Cake

What could be better than drinking your favorite liqueur? Eating it!

Amaretto Sour is my favorite alcoholic beverage. At the suggestion of a friend, I found a recipe for amaretto cake and tested it out. WowWee! Talk about delicious. This cake is my favorite cake (and everyone I’ve made it for since).

The recipe only has a little bit of amaretto liqueur in it when it’s baked, and then like black cake, it’s infused with more liquor after it has been removed from the oven. This is done while it’s still hot. The icing which is drizzled on the cake, is also made with amaretto liqueur and icing sugar. I’ve started brushing the icing on like a glaze instead of drizzling it over the cake. Now you get the taste of the liqueur in each bite. Talk about a treat! It’s best made in a bundt shaped cake pan which also makes the slices easy to cut.

For events at work, or where there will be minors, I’ve been able to adjust the recipe to not include the liquor and still get the same flavor using almond essence.

Here…have a slice one me 🙂 Don’t forget to have an Amaretto Sour as well.
