I’m working from home today because I woke up to water on my bedroom floor after a long rainy night. Ah well, that’s how it goes sometimes.
Since I didn’t prepare anything last night for lunch today, I had to cook. Though I love cooking, I had no idea what I wanted. I didn’t feel for fish or shrimp today and so I decided on chicken. OK, so now how do I want that chicken cooked? I needed something quick and simple.
I’m not sure I mentioned this before, but my meat is always seasoned and ready to cook. When I purchase meat I immediately clean, season and portion it out in freezer bags. When its time to cook, I only need to defrost and its ready.
After gathering up all the spices and the panko breadcrumbs , I mixed them in a bowl and set that aside. I then melted butter in another bowl to use as a base for the chicken to adhere to the breadcrumb mix. The two chicken breasts were sliced and coated with butter then breadcrumbs, then on to my foil covered baking tray and into the oven!
While the chicken was “frying” I chose my sides. Today’s menu consisted of crinkle cut fries, Pillsbury biscuits, steam-in-bag corn and a steam-in-bag rice mix. I have grown very fond of the steam-in-bag options in the supermarket freezer section. They make my life a lot simpler as I mostly only have to prepare my meats. The freezer is always stocked with rice mixes, brown rice (which would normally take FOREVER to boil), white rice, broccoli, cauliflower, corn, carrots, kale, etc… French fries were recently on sale and though they aren’t usually on my shopping list, I picked a couple bags up and they’ve come in pretty handy.
I’m a bread and biscuit lover, which is not good for my hips or waistline. I’ve found an easy way to tame my biscuit eating – make only one! Since getting Pillsbury’s frozen biscuits which come in a bag, I can cook only as much as I need and not have to worry about finishing the whole can of the refrigerated version.
My day didn’t go as planned, but that’s part of life right? I enjoyed my time in the kitchen and of course having a fresh homemade meal for lunch. I know what I plan to have for lunch tomorrow!
